MAKE.... A smashed potato salad. 1kg Dutch Cream potatoes. Peeled, boiled and smahed with the back of a fork. Put them on a large platter. Drizzle lemon oil all over (or olive oil and fresh lemon zest). Then dollop 2 huge spoons of sour cream on top. Add 1 thinly sliced red onion and 1 big tablespoon baby capers on top of the sour cream. 
Voila! Super Yum.
