MAKE MY MACARONI CHEESE BAKE.... You'll love this, a little gourmet but so easy to make. The kids give it a huge thumbs up and I always make a big tray so its perfect tucker for next day lunch boxes. Dont take the recipe to heart, a lttle more cheese here, a little less pepper there, not a problem. Even double the recipe for more leftovers. Make it your own. Serve it with a green salad or roasted vegies on a cold night. Bon Appetit.
Ok. Here we go.
1 500g pkt dried macaroni (cooked al dente)
A knob of butter
2 heaped tblsp plain flour
About 3 or 4 cups milk
Salt &  pepper
1/2 cup each, grated parmesan and mozzarella cheese
1 cup grated tasty cheese
1 cup fresh breadcrumbs
3 ripe sweet tomotoes sliced

Melt butter in a sauepan. Add the flour and stir till completely coated with the melted butter. Stir for a further minute over heat. Then with a whisk, add a cup of milk at a time stirring continuously till it reaches a thick, cream like consistency. Then stir through a pinch of good sea salt and cracked pepper to taste. Add the grated cheeses one at a time, stirring through.
Pour the white cheese sauce through the cooked pasta.
Pour this mixture into a baking dish.
Sprinkle the breadcrumbs over the top.
Then finally lay the sliced tomatoes over the crumbs.
Pop it into the oven at 180deg for 30 mins.
Done. Now enjoy!
