MAKE A WARM, GOOEY TREACLE PUDDING TONIGHT.... I love pudding. When I saw this I thought....yep. Come to me sugar! Easy to make. Pop it in the microwave & its ready in 12 minutes. Voila. Super indulgent. Add a blob of cream. Sit in front of the telly and watch Sex & the City re-runs. The nights are getting chilly & this just warms up my insides (and makes my outsides a little more 'round', whatever!). Bon Appetit. 

Ingredients


  • butter, for greasing
  • 175 g plain flour, sifted
  • 50 g soft dark brown sugar
  • 75 g vegetable suet
  • 1 teaspoon bicarbonate of soda
  • 2 teaspoons ground ginger
  • 1 free-range egg
  • 1 tablespoon golden syrup, plus extra for the basin
  • finely grated zest and juice of 1 orange
  • ½ teaspoon vanilla extract
  • 150 ml milk
  • cream or custard, to serve


    Method

    Grease a 1 litre pudding basin well with butter. Mix all the ingredients together in a bowl. Pour some extra golden syrup into the pudding basin (about 5 tablespoons) and pour the mixture in on top of it.

    Cover the pudding with a pleated sheet of greaseproof paper and tie in place with string. Cook on the medium setting of your microwave (750W) for 12 minutes. Let it stand for 10 minutes before turning out.

    Serve with cream or custard.
